Method
 

Step-by-Step Instructions
  1. Prepare the Peaches: Wash the peaches under cold water. Blanch in boiling water for 30 seconds, then transfer to an ice bath for 5 minutes.
  2. Dice the Peaches: Peel and chop the peaches into small, uniform pieces, then place them in a bowl.
  3. Puree the Ingredients: In a food processor, combine the chopped peaches, diced onions, and finely chopped jalapenos. Pulse until smooth.
  4. Combine All Ingredients in a Pot: Transfer the puree to a pot and add vinegar, sugar, salt, and bourbon. Stir well and heat on medium.
  5. Simmer the Sauce: Bring to a gentle boil, then reduce heat to medium-low and simmer uncovered for at least 30 minutes.
  6. Prepare Canning Jars: Wash jars in hot, soapy water and rinse thoroughly. Keep them hot.
  7. Fill the Jars: Ladle the thickened sauce into the jars, leaving 1/4 inch headspace. Wipe rims clean.
  8. Process the Jars: Submerge jars in boiling water and process for 15 minutes.
  9. Cool and Store: Remove jars from the water and let them cool upright. Check seals after 24 hours.
