Step-by-Step Instructions
  1. Prepare Mango Puree: Peel, pit, and dice two ripe mangoes. Blend until smooth. Pass through a sieve for ultra-smooth texture.
  2. Bloom Gelatin/Agar Agar: In a bowl, combine 1 tablespoon of gelatin or agar agar with 4 tablespoons of cold water. Let it sit for 30-45 seconds.
  3. Combine Ingredients: Whisk in 1/4 cup of sugar and 1 cup of coconut milk into the bloomed mixture, then gently stir in mango puree.
  4. Heat the Mixture: Warm the mixture over medium-low heat for 4-5 minutes, stirring constantly until dissolved. Don't allow to boil.
  5. Set Pudding: Pour into serving bowls, smoothing the surface, cover, and refrigerate for at least 6 hours or overnight.
