  • 1 cup pumpkin puree canned or homemade
  • 1/2 cup water adjust for desired consistency
  • 1/4 cup oil or almond butter or more pumpkin for lower fat
  • 1/2 cup mini chocolate chips optional
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon optional

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9"x5" loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly blended.
  3. In a separate bowl, mix the sugar, pumpkin puree, water, oil or almond butter, and vanilla extract until smooth.
  4. Gently pour the wet mixture into the dry ingredients and fold them together until just combined.
  5. If desired, add mini chocolate chips, then pour the batter into the prepared loaf pan.
  6. Bake in the preheated oven for 40 minutes or until a toothpick comes out mostly clean.
  7. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
