Ingredients

For the Bread
  • 1 loaf Focaccia Bread The key foundation of this sandwich; make sure it's fresh for the perfect texture.
For the Spread
  • 4 ounces Butter Adds richness and moisture while ensuring the bread stays crisp and delicious.
  • 4-5 cloves Garlic Provides aromatic depth; feel free to skip it for a garlic-free version.
  • ½ cup Mayonnaise Acts as a creamy binder; swap for Greek yogurt for a lighter take.
For the Filling
  • 2 cups Deli Olive Tapenade Infuses robust, savory flavors; try hummus or pesto for fun variations.
  • 12 ounces Genoa Salami Delivers nice savory hints; turkey or chicken are great lighter substitutes.
  • 2 Roasted Red Bell Peppers Add sweetness and color; fresh veggies can create a lighter version.
  • 8 ounces Smoked Turkey Brings moisture and texture; replace it with roast beef for a heartier option.
  • 12 ounces Provolone Cheese Melts beautifully and complements the sandwich; Mozzarella or Swiss can work too.
  • ½ cup Fresh Parsley Lends a fresh herbaceous touch; consider cilantro for a different flavor.
  • 16 ounces Ham Enhances depth and saltiness; use a vegetarian deli alternative for a meat-free option.
  • 2 cups Fresh Basil Provides aromatic freshness; experiment with spinach or arugula for a twist.

Equipment

  • plastic wrap
  • baking sheet
  • Heavy object (cast iron skillet)
  • Serrated knife

Method

Sandwich Assembly
  1. Begin by slicing the focaccia bread lengthwise to create two equal halves, exposing the soft interior.
  2. Take the softened butter and generously apply it to both cut sides of the focaccia.
  3. In a small bowl, combine the grated or crushed garlic with mayonnaise to create a flavorful aioli. Spread this mixture evenly onto both halves of the focaccia.
  4. On the bottom half of the focaccia, layer fresh basil leaves, followed by the Genoa salami, smoked turkey, and ham. Then add slices of roasted red bell peppers and a generous layer of provolone cheese.
  5. Carefully place the top half of the focaccia back on top of the layered ingredients to create a complete sandwich.
  6. Tightly wrap the assembled sandwich in plastic wrap to secure all the delightful ingredients within. Place it on a baking sheet, weigh it down with a heavy object like a cast iron skillet, and refrigerate for at least 4 hours or overnight.
  7. Once sufficiently pressed, unwrap the sandwich and use a serrated knife to carefully slice it into portions.
