Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground pork, jerk seasoning, minced garlic, chopped scallions, grated ginger, salt, and pepper. Mix until just combined and let it rest for 5 minutes.
  2. Shape the mixture into golf ball-sized meatballs and place on a lined baking sheet.
  3. Heat a skillet over medium heat with oil. Add the meatballs and sauté for 6–8 minutes until golden brown.
  4. Remove meatballs and in the same skillet, combine coconut milk, curry powder, and brown sugar. Simmer to create a creamy sauce.
  5. Return meatballs to the skillet, cover, and simmer for 20 minutes.
  6. Serve over jasmine rice or alongside roasted vegetables, garnished with scallions or cilantro.
