- Let the cream cheese sit at room temperature for about 30 minutes. Wash and dry cucumbers thoroughly.
- Combine softened cream cheese, lemon juice, optional garlic, chives, salt, and pepper in a bowl and mix until creamy.
- Slice cucumbers into 1/2-inch thick rounds and scoop out seeds if necessary. Pat dry with paper towels.
- Spread or pipe cream cheese filling onto each cucumber slice and top with a piece of cold-smoked salmon.
