Step-by-Step Instructions for Kashmiri Pink Chai
  1. Pour 4 cups of filtered water into a sturdy pot. Bring to a rolling boil over medium-high heat. Add 2 tablespoons of Kashmiri green tea leaves, reduce heat, and simmer for 5 minutes.
  2. Stir in 1/2 teaspoon of baking soda and allow to boil for 2 additional minutes.
  3. Add 1 star anise, 4 crushed cardamom pods, and 1 cinnamon stick. Boil for 1 minute.
  4. Reduce heat to low and allow chai to simmer uncovered for 20-30 minutes until reduced to about half its volume.
  5. Mix in 1/4 teaspoon of Himalayan salt and stir well.
  6. Slowly add 2 cups of whole milk over low heat, stirring continuously. Simmer gently.
  7. Remove from heat, sweeten to taste, and strain into cups.
