Ingredients
  

For the Salmon
  • 4 fillets Salmon Fillets use thawed if frozen
  • 1/4 cup Unsalted Butter or olive oil for a lighter twist
  • 2 tbsp Fresh Lemon Juice bottled works in a pinch
  • 2 cloves Garlic, minced or garlic powder
  • to taste Salt
  • to taste Pepper
  • 1 slices Lemon Slices (for garnish) lime slices can work as well
  • 2 tbsp Fresh Parsley, chopped or chives as an alternative
For the Crispy Potatoes
  • 1 lb Baby Potatoes, halved other small potatoes can be substituted
  • 2 tbsp Olive Oil any neutral oil works
  • 1 tsp Garlic Powder skip if using fresh garlic
  • 1 tsp Paprika for a smoky flavor
For the Broccoli
  • 2 cups Broccoli florets asparagus or green beans can be used
  • 1 tsp Lemon Zest optional

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss well until evenly coated and spread them on a baking sheet.
  3. Roast the potatoes in the preheated oven for 20 minutes until tender and golden brown.
  4. Toss broccoli florets with olive oil, salt, and pepper, and set aside.
  5. After 20 minutes, add seasoned broccoli to the baking sheet with potatoes and roast for an additional 15-20 minutes.
  6. Melt unsalted butter in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in fresh lemon juice, adding salt and pepper to taste.
  7. Cook salmon fillets skin-side down in the garlic butter for 4-5 minutes, then flip and cook for an additional 3-4 minutes until flaky.
  8. Plate the crispy potatoes and roasted broccoli beside the salmon. Drizzle with lemon butter sauce and garnish with lemon slices and parsley.

Notes
