- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss well until evenly coated and spread them on a baking sheet.
- Roast the potatoes in the preheated oven for 20 minutes until tender and golden brown.
- Toss broccoli florets with olive oil, salt, and pepper, and set aside.
- After 20 minutes, add seasoned broccoli to the baking sheet with potatoes and roast for an additional 15-20 minutes.
- Melt unsalted butter in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in fresh lemon juice, adding salt and pepper to taste.
- Cook salmon fillets skin-side down in the garlic butter for 4-5 minutes, then flip and cook for an additional 3-4 minutes until flaky.
- Plate the crispy potatoes and roasted broccoli beside the salmon. Drizzle with lemon butter sauce and garnish with lemon slices and parsley.
