Ingredients
  

For the Choux Pastry
  • 1 cup Water hydrating the flour
  • 1/2 cup Unsalted Butter adds richness

  • 1 tablespoon Sugar adds sweetness
For the Lemon Cream Filling
  • 1 cup Heavy Cream can substitute with whipped topping
  • 1 large Lemon Juice and Zest for bright flavor
For the Raspberry Glaze
  • 1 cup Fresh Raspberries frozen can be substituted
  • 1 cup Powdered Sugar adjust according to taste

Method
 

Choux Pastry Preparation
  1. In a medium saucepan, combine water, butter, and sugar. Heat until simmering. Gradually add flour while stirring until a dough forms.
  2. Remove from heat and let cool for 5 minutes. Gradually add eggs, mixing until smooth consistency is achieved.
  3. Preheat oven to 425°F (220°C). Pipe 4-inch long strips onto lined baking sheet, spacing 2 inches apart.
  4. Bake for 20-25 minutes until golden brown. Do not open the oven door for the first 20 minutes. Cool in the oven for 10 minutes.
Filling and Glaze Preparation
  1. Whisk heavy cream with lemon juice and zest until soft peaks form.
  2. Blend fresh raspberries until smooth. Strain and mix with powdered sugar.
  3. Inject lemon cream into cooled eclairs. Dip tops in raspberry glaze and allow excess to drip off.
