Choux Pastry Preparation
- In a medium saucepan, combine water, butter, and sugar. Heat until simmering. Gradually add flour while stirring until a dough forms.
- Remove from heat and let cool for 5 minutes. Gradually add eggs, mixing until smooth consistency is achieved.
- Preheat oven to 425°F (220°C). Pipe 4-inch long strips onto lined baking sheet, spacing 2 inches apart.
- Bake for 20-25 minutes until golden brown. Do not open the oven door for the first 20 minutes. Cool in the oven for 10 minutes.
Filling and Glaze Preparation
- Whisk heavy cream with lemon juice and zest until soft peaks form.
- Blend fresh raspberries until smooth. Strain and mix with powdered sugar.
- Inject lemon cream into cooled eclairs. Dip tops in raspberry glaze and allow excess to drip off.
