Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by greasing it or lining it with parchment paper.
- In a mixing bowl, whisk together the flour, sugar, and salt. Mix in the melted butter, egg, and vanilla extract until smooth.
- Spread the batter evenly into the prepared dish.
- Mash the raspberries in another bowl and mix with lemon juice and zest.
- Drop spoonfuls of the raspberry mixture onto the batter and swirl gently.
- Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool for 10 minutes in the pan, then transfer to a wire rack. Dust with powdered sugar before serving.
