  • 1 whole Cucumber Thinly sliced
  • 1 cup Fresh leafy greens (lettuce, spinach, or arugula)
  • 1/2 cup Cherry tomatoes Halved, optional
  • 1/4 medium Red onion Thinly sliced
  • 2 tablespoons Fresh herbs (dill, basil, or cilantro) Chopped
Seasoning
  • 1 tablespoon Lemon juice For brightening flavors
  • to taste Salt
  • to taste Pepper
Spread
  • 1 tablespoon Olive oil or favorite sandwich spread Optional, adds richness

Method
 

Step-by-Step Instructions
  1. Toast the bread of choice for about 3-5 minutes until golden and crisp.
  2. Mash the avocado in a mixing bowl with a fork until smooth; add lemon juice, salt, and pepper.
  3. Spread the mashed avocado evenly on one side of each slice of toasted bread.
  4. Layer thinly sliced cucumbers on top of the avocado spread.
  5. Add a handful of fresh leafy greens and then the sliced red onion.
  6. If desired, add halved cherry tomatoes and sprinkle with fresh herbs.
  7. Drizzle with olive oil or your favorite spread, if using.
  8. Close the sandwich with the second slice of bread, avocado side facing the toppings, and cut in half to serve.
