  • 1/2 cup diced mangos ripe
  • 1 tsp yellow food coloring gel optional
  • 1 tbsp miso red or white, optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the glutinous rice flour, 1 cup of cold water, neutral oil, baking powder, and granulated sugar. Stir until smooth.
  3. Divide the batter into two bowls. Fold in yellow food coloring gel into one bowl and diced mangos into the other.
  4. Drop spoonfuls of both batters onto the prepared baking sheet, spacing them 1 inch apart.
  5. Bake for 13-14 minutes until firm, golden, and slightly browned.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
