- Preheat the oven to 425°F (220°C). Prepare your baking sheet for the ingredients.
- Pat the chicken thighs dry with paper towels and place them in a large bowl.
- In a separate bowl, whisk together the maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper until well combined.
- Pour the marinade over the chicken thighs and coat them evenly.
- Peel and cube the sweet potatoes into bite-sized pieces and toss them in a bowl with olive oil, salt, and pepper.
- Spread the marinated chicken thighs and seasoned sweet potatoes in a single layer on the prepared baking sheet.
- Roast for about 30 minutes, flipping the chicken halfway through and basting with any remaining marinade.
- Optional: Toss in some fresh spinach or arugula during the last 5 minutes of roasting.
- Remove from the oven and let it cool slightly before serving, garnished with herbs or nuts if desired.
