Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts boneless and skinless
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive Oil or any cooking oil
For the Sauce
  • 3 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes chopped
  • 1 cup Chicken Broth or vegetable broth
  • 1 cup Heavy Cream or half-and-half
  • 1/2 cup Parmesan Cheese grated
  • 1 tsp Italian Seasoning
  • 1/4 tsp Crushed Red Pepper Flakes optional
For the Pasta
  • 8 oz Pasta penne or fettuccine
  • 1/4 cup Fresh Basil torn for garnish

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden and cooked through. Remove and let rest.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add sun-dried tomatoes and cook for an additional minute.
  4. Pour in chicken broth and heavy cream, stir in parmesan cheese and season with Italian seasoning and red pepper flakes. Stir until smooth.
  5. Slice the rested chicken and return it to the skillet. Add drained pasta, tossing to coat with the sauce.
  6. Garnish with torn basil and additional parmesan if desired. Serve hot.
