Step‑by‑Step Instructions for Mediterranean Baked Fish
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the whole fish fillets dry using paper towels. Sprinkle salt, black pepper, and dried oregano on both sides.
  4. In a large skillet, heat olive oil over medium heat. Sauté sliced onions until translucent, about 3–4 minutes. Add bell pepper and zucchini, cooking until tender (3–5 minutes). Stir in minced garlic and sauté for an additional minute.
  5. Spread the sautéed vegetable mixture in your greased baking dish. Place seasoned fish fillets on top, scatter with cherry tomatoes, and sprinkle with fresh parsley and dill. Drizzle with lemon juice and zest.
  6. Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for about 20 minutes.
  7. Remove the foil and return the dish to the oven. Bake for an additional 5-10 minutes until the fish flakes easily with a fork.
  8. Let the Mediterranean Baked Fish cool slightly, garnish with fresh herbs and lemon wedges, and serve.
