Ingredients
  

Quesadilla Filling
  • 2 cups fresh spinach can substitute with kale
  • ½ cup feta cheese can substitute with goat cheese
  • 1 cup mozzarella cheese can substitute with provolone
  • 1 medium red onion can use yellow onion
Quesadilla Base
  • 4 pieces tortillas whole wheat or gluten-free alternatives available
  • 1 tablespoon olive oil or butter for richer flavor

Method
 

Preparation
  1. Wash and roughly chop fresh spinach. Slice red onion thinly, grate mozzarella, and crumble feta cheese.
Assembly
  1. Lay a tortilla flat. Add spinach, feta, mozzarella, and red onion on one half and fold.
Cooking
  1. Heat olive oil in skillet. Cook the quesadilla for 3-4 minutes on each side until golden and cheese is melted.
Serving
  1. Remove from skillet, let rest, slice into wedges, and serve with tzatziki or salad.
