Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine all-purpose flour, baking powder, salt, and ground cinnamon. Whisk until distributed.
  3. In a separate bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract to the butter-sugar mixture, beat until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In another bowl, mix brown sugar and ground cinnamon for the filling. Set aside.
  7. Spread half of the cookie dough on parchment paper, sprinkle with filling, and roll tightly.
  8. Slice the rolled dough into 1-inch thick rounds and place them on a baking sheet.
  9. Bake for 10-12 minutes until edges are golden brown.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
