Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine all-purpose flour, baking powder, salt, and ground cinnamon. Whisk until distributed.
- In a separate bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract to the butter-sugar mixture, beat until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- In another bowl, mix brown sugar and ground cinnamon for the filling. Set aside.
- Spread half of the cookie dough on parchment paper, sprinkle with filling, and roll tightly.
- Slice the rolled dough into 1-inch thick rounds and place them on a baking sheet.
- Bake for 10-12 minutes until edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
