- Preheat a large skillet over medium heat for about 3 minutes, brushing with a mixture of half vegetable oil and half bacon fat.
- Place two mini flour tortillas on a clean surface and sprinkle approximately 1/4 cup of shredded cheese evenly over each.
- On one tortilla, layer crumbled bacon bits and on the other, sprinkle chopped jalapeños. Press top tortilla on filled one.
- Place the assembled tortillas in the preheated skillet and cook for about 2 to 3 minutes until golden brown.
- Flip the stacked quesadillas and cook for another 2 to 3 minutes, pressing down gently with the spatula.
- Remove the quesadilla from the skillet and place it on a paper towel-lined plate to drain excess grease.
- Continue making additional mini quesadillas with the remaining ingredients and serve warm with salsa.
