Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mixed berries, lemon juice, lemon zest, maple syrup, and cornstarch.
  3. On a lightly floured surface, roll out the thawed puff pastry until it’s slightly thinner and cut into four rectangles.
  4. Spoon a generous amount of the berry mixture onto each pastry rectangle, leaving a ½-1 inch border around the edges.
  5. Fold the edges of the puff pastry over the berry mixture to form a rustic tart rim.
  6. Whisk an egg to create an egg wash and lightly coat the edges of each tart.
  7. Place the baking sheet in the oven and bake for 20-25 minutes or until golden brown.
  8. Let the tarts cool slightly before serving, best enjoyed warm.
