  • 1/2 cup mayonnaise can replace with more sour cream or yogurt
  • 8 oz cream cheese softened
  • 2 cups cheddar cheese shredded, can use Colby Jack or Monterey Jack
Topping
  • 1 cup Ritz crackers crushed, can swap with panko or cornflakes
  • 1/4 cup butter melted
  • 1 cup onions optional, can use shallots

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease your casserole dish.
  2. Combine shredded chicken, sour cream, mayonnaise, cream cheese, and half of the cheddar cheese in a large bowl.
  3. Spread the creamy chicken mixture evenly in the greased casserole dish.
  4. Crush Ritz crackers and mix with melted butter, then sprinkle over the chicken mixture.
  5. Bake in the preheated oven for about 30 minutes until golden brown.
  6. Allow the casserole to rest for 5 minutes before serving.
