Method
 

Step-by-Step Instructions
  1. In a high-speed blender, combine ½ cup of cottage cheese, 2 tablespoons of maple syrup, and 1 tablespoon of peanut butter (if using). Blend on medium speed for about 30 seconds, or until the mixture is smooth and creamy.
  2. Transfer the creamy mixture into a large mixing bowl. Add in 2 tablespoons of cocoa powder, ¼ cup of almond flour, and 1 scoop of chocolate protein powder. Gently fold the dry ingredients into the wet mixture until fully incorporated.
  3. Gently fold in ¼ cup of mini chocolate chips into the brownie batter mixture.
  4. Measure out portions and roll them into 10-12 bite-sized balls, about an inch in diameter. Place each ball on a parchment-lined tray.
  5. Place the tray of rolled bites in the refrigerator and chill for about 20 minutes.
