Step-by-Step Instructions
  1. Prepare the Honey BBQ Sauce by mixing honey and barbecue sauce in a small bowl. Set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  3. Generously season the chicken thighs with salt, pepper, and paprika. Sear the chicken in the skillet for 3-4 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, add chopped onion and minced garlic, stirring for 2-3 minutes until softened and fragrant.
  5. Stir in 1 cup of long-grain white rice and cook for about 1 minute while stirring constantly.
  6. Pour in 2 cups of chicken broth and stir to combine. Nestle the seared chicken back into the skillet.
  7. Drizzle the honey BBQ sauce over the chicken and rice mixture. Bring to a gentle boil.
  8. Reduce heat to low and cover the skillet. Simmer for 18-20 minutes until rice is tender.
