Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Once shimmering, add 1 chopped onion and sauté until translucent, about 5 minutes.
  2. Add 4 cloves of minced garlic and ½ cup of chopped sun-dried tomatoes, stirring for 2-3 minutes.
  3. Mix in 2 tablespoons of tomato paste, then deglaze the pot with 3 cups of chicken stock.
  4. Pour in 1 cup of heavy whipping cream, followed by 1 teaspoon of kosher salt, ½ teaspoon of black pepper, and ½ teaspoon of red chili flakes.
  5. Add 12 ounces of penne pasta and cook uncovered for about 10 minutes, stirring occasionally.
  6. Once pasta is al dente, fold in 4 cups of fresh spinach and ¼ cup of chopped basil, allowing to wilt for 2 minutes.
  7. Stir in ¾ cup of grated parmesan cheese until melted and mixed.
