Step‑by‑Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 finely chopped onion and 2 minced garlic cloves to the skillet. Sauté for 3 minutes.
  3. Stir in 8 ounces of sliced mushrooms and cook for about 6-8 minutes.
  4. Next, add 1 cup of orzo pasta to the skillet and stir it in for 1-2 minutes.
  5. Pour in 4 cups of vegetable broth or water, scraping up any browned bits.
  6. Add 4 cups of fresh spinach to the skillet and stir until the spinach wilts.
  7. Remove from heat and mix in ½ cup of grated Parmesan cheese and the juice of half a lemon.
  8. Spoon the creamy orzo dish into bowls and garnish with fresh parsley.
