Step-by-Step Instructions
  1. Prep Sweet Potatoes: Peel and chop the sweet potatoes into even chunks. Place in a pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until fork-tender. Drain and mash with ghee or coconut oil and coconut milk until smooth. Season with salt and pepper.
  2. Cook the Filling: In an oven-safe skillet, heat ghee or coconut oil over medium heat. Add ground meat and cook until browned, about 6-8 minutes. Add diced onions and carrots, sauté for another 5 minutes.
  3. Combine: Stir in any additional vegetables. Cook for another 3-4 minutes. Season with salt and pepper.
  4. Assemble: Spread the filling evenly in the skillet. Dollop the sweet potato mash on top and spread gently to cover.
  5. Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes until edges are bubbling and top is golden. Cool slightly before serving.
