Method
 

Preparation
  1. In a small bowl, whisk together ¼ cup balsamic vinegar, 1 tablespoon Dijon mustard, 1 tablespoon honey (or agave), and 1 teaspoon dried oregano. Gradually drizzle in ⅓ cup extra-virgin olive oil while whisking until smooth and emulsified. Season with salt and pepper, then set aside.
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-11 minutes. Drain and rinse under cold water.
  3. In a large mixing bowl, combine the cooled pasta, diced mozzarella, diced peaches, and halved cherry tomatoes. Gently add arugula and minced basil. Pour the balsamic dressing over the top and toss to coat.
  4. Taste the salad and adjust seasoning with salt and pepper as desired. Cover and refrigerate for at least 30 minutes before serving.
