Dressing

Method
 

Preparation
  1. In a small bowl, whisk together ¼ cup of balsamic vinegar, 1 tablespoon of Dijon mustard, and 1 tablespoon of honey until well combined. Gradually drizzle in ½ cup of extra-virgin olive oil while whisking to create a smooth emulsion. Season with salt and pepper, and set aside.
  2. Bring a large pot of salted water to a rolling boil. Add 1 pound of pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  3. Wash and chop 3 peaches, 2 cups of cherry tomatoes, and ½ cup of fresh basil leaves. Rinse 1 cup of arugula.
  4. In a large mixing bowl, combine the cooled pasta, chopped mozzarella, peaches, cherry tomatoes, arugula, and basil. Pour the dressing over and toss gently.
  5. Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.
