Preparation Steps
  1. Start by slicing the ciabatta roll in half horizontally. Drizzle each half lightly with good quality olive oil, ensuring even coverage.
  2. Heat a panini press or cast iron skillet over medium-high heat. Place the ciabatta halves cut-side down and toast for about 3-4 minutes, or until golden brown with crispy edges.
  3. Once toasted, remove the ciabatta from the heat and allow it to cool slightly. Spread a generous layer of basil pesto on both halves of the bread.
  4. On the bottom half of the ciabatta, start layering with fresh mozzarella slices, then add prosciutto, heirloom tomatoes, and top with arugula.
  5. Drizzle balsamic glaze liberally over the layered ingredients.
  6. Place the top half of the ciabatta roll over the fillings to close your sandwich. Serve immediately or wrap in parchment paper for storage.
