  • 2 medium Sweet Potatoes the star of the dish
For the Filling
  • 1 tablespoon Olive Oil for roasting and sautéing
  • 1 medium Onion diced
  • 1 cup Bell Peppers diced, any color
  • 2 cups Protein (ground turkey, beans, or shredded chicken) for your filling
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin for spice
  • 1 teaspoon Chili Powder for heat
  • 2 cups Spinach fresh
For the Topping
  • 1 cup Cheese (Optional) feta, mozzarella, or vegan cheese
  • Garnishes cilantro, green onions, crumbled feta

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the sweet potatoes lengthwise, brush with olive oil and sprinkle with salt. Roast cut-side down on a baking sheet for 35-45 minutes until tender.
  3. Heat olive oil in a skillet over medium heat. Sauté diced onions and bell peppers for 5-7 minutes until soft.
  4. Add your chosen protein to the skillet and cook until fully cooked, around 8-10 minutes. Add garlic, cumin, and chili powder during the last minutes.
  5. Stir in fresh spinach and cook for 2-3 minutes until wilted.
  6. Remove sweet potatoes from the oven, let cool, then scoop out flesh to create cavities. Mix scooped flesh into protein filling.
  7. Fill each sweet potato half with the protein mixture and sprinkle with cheese if desired. Bake for another 10 minutes.
  8. Let cool for a few minutes, then garnish with cilantro, green onions, or crumbled feta before serving.
