  • 1 tbsp Olive Oil A light drizzle for roasting adds flavor and helps with caramelization.
For the Filling
  • 1 lb Ground Turkey Packed with protein, it brings a savory richness to your sweet potato boats.
  • 1 can Black Beans Offers additional protein and fiber; canned versions make prep a breeze.
For the Toppings
  • 1 cup Cheese Melts beautifully on top; try cheddar or a dairy-free alternative.
  • 1 medium Avocado Adds richness and freshness; replace it with guacamole for added zest.
  • 1 cup Sour Cream A dollop on top balances flavors and adds creaminess; Greek yogurt works as a healthy alternative.
  • 2 stalks Green Onions Chopped green onions bring a pop of color and mild flavor; optional.

Equipment

  • oven
  • baking sheet
  • Skillet
  • Parchment paper

Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce them several times with a fork. Place them on a baking sheet lined with parchment paper and bake for 45-60 minutes, until they are fork-tender and have a caramelized skin.
  2. While the sweet potatoes are baking, heat a skillet over medium heat. Add a splash of olive oil, then crumble in the ground turkey. Season with your favorite spices and sauté for about 5-7 minutes, until cooked through and browned.
  3. Drain and rinse the black beans before adding them to the skillet with the turkey. Stir to combine and heat through for an additional 3-4 minutes.
  4. Remove the sweet potatoes from the oven, slice them open lengthwise and gently fluff the insides with a fork. Spoon the turkey and black bean mixture into the center of each sweet potato.
  5. Sprinkle your choice of cheese generously over the top of the stuffed sweet potatoes. Return them to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
  6. Let the sweet potato boats cool slightly. Top with your favorite additions like avocado, sour cream, and green onions. Serve warm.
