Preparation Steps
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash, toss with olive oil, salt, and pepper. Wrap garlic bulb in aluminum foil.
- Spread squash on a baking sheet and roast along with garlic for 25–30 minutes until tender.
- Boil salted water, add noodles and cook until al dente. Drain and lay flat on parchment paper.
- Mash roasted squash and mix with garlic, ricotta, mozzarella, Parmesan, sage, salt, and pepper until creamy.
- Spread marinara sauce in a baking dish, fill noodles with the mixture, and roll tightly, seam-side down.
- Cover roll-ups with more marinara and sprinkle with mozzarella before baking.
- Cover with foil and bake at 375°F (190°C) for 20–25 minutes until cheese is bubbly and golden.
