Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash, toss with olive oil, salt, and pepper. Wrap garlic bulb in aluminum foil.
  3. Spread squash on a baking sheet and roast along with garlic for 25–30 minutes until tender.
  4. Boil salted water, add noodles and cook until al dente. Drain and lay flat on parchment paper.
  5. Mash roasted squash and mix with garlic, ricotta, mozzarella, Parmesan, sage, salt, and pepper until creamy.
  6. Spread marinara sauce in a baking dish, fill noodles with the mixture, and roll tightly, seam-side down.
  7. Cover roll-ups with more marinara and sprinkle with mozzarella before baking.
  8. Cover with foil and bake at 375°F (190°C) for 20–25 minutes until cheese is bubbly and golden.
