Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then chop sweet potatoes and carrots into 3/4-inch to 1-inch pieces.
  3. Transfer the chopped sweet potatoes and carrots into a large baking dish, spreading them out in an even layer.
  4. Sprinkle in minced garlic, pour over olive oil and maple syrup, then add thyme, rosemary, cinnamon, and salt. Toss everything together.
  5. Place the baking dish in the preheated oven and roast for 35 to 40 minutes, tossing halfway through.
