  4. Stir in 1 can of black beans, 1 cup of roasted corn, 3 cups of shredded rotisserie chicken, 1 can of diced green chiles, 1 cup of chicken broth, 1 cup of salsa verde, and 1 cup of long grain white rice. Mix thoroughly.
  5. Increase heat to medium-high and allow the mixture to come to a boil, which should take about 2-3 minutes.
  6. Cover the skillet and let it simmer for 15 minutes.
  7. After 15 minutes, carefully check the rice for doneness; add another ½ cup of chicken broth or water if necessary.
  8. Once the rice is cooked, turn off the heat and sprinkle 1 cup of shredded Monterey Jack cheese over the top. Let it sit for 2-3 minutes.
  9. Serve hot, garnished with freshly chopped cilantro.
