- In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat until shimmering, about 2 minutes.
- Add 1 diced yellow onion and 3 minced garlic cloves to the skillet. Sauté for about 3-4 minutes until the onions are translucent.
- Mix 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of garlic powder, and a pinch of sea salt and black pepper. Sprinkle this blend into the skillet.
- Stir in 1 can of black beans, 1 cup of roasted corn, 3 cups of shredded rotisserie chicken, 1 can of diced green chiles, 1 cup of chicken broth, 1 cup of salsa verde, and 1 cup of long grain white rice. Mix thoroughly.
- Increase heat to medium-high and allow the mixture to come to a boil, which should take about 2-3 minutes.
- Cover the skillet and let it simmer for 15 minutes.
- After 15 minutes, carefully check the rice for doneness; add another ½ cup of chicken broth or water if necessary.
- Once the rice is cooked, turn off the heat and sprinkle 1 cup of shredded Monterey Jack cheese over the top. Let it sit for 2-3 minutes.
