- In a large mixing bowl, combine 1 teaspoon of sugar and 1 packet of active dry yeast with 1.5 cups of warm water. Stir gently and let it sit for about 5-10 minutes until foamy.
- Once the yeast is foamy, add 2 tablespoons of olive oil, 3.5 cups of flour, and 1 teaspoon of salt to the bowl. Mix until a shaggy dough forms.
- Transfer the dough to a floured surface and knead it for 8-10 minutes until smooth and elastic.
- Grease a bowl with olive oil, place the kneaded dough inside, cover, and let it rise in a warm spot for 1-1.5 hours.
- While the dough rises, brown the Italian sausage in a skillet over medium heat for 5-7 minutes. Drain any excess grease, then add the sliced red onion and sauté for 3-4 minutes. Stir in minced garlic for another minute.
- Season the sausage mixture with salt and black pepper to taste and set aside to cool.
- Preheat your oven to 450°F. If using a pizza stone, place it in the oven.
- Once risen, punch the dough down and divide it in half. Roll out one portion on a floured surface into a 12-inch circle.
- Brush the rolled-out dough with olive oil and layer on the sausage mixture evenly. Crumble feta cheese on top.
- Slide your assembled pizza into the preheated oven and bake for 12-15 minutes until golden brown.
- Remove the pizza from the oven, drizzle with honey, and sprinkle with fresh basil and optional red pepper flakes.
