Step-by-Step Instructions
  1. In a mixing bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of honey or brown sugar, 2 tablespoons of rice vinegar, and 1/4 cup of water, until smooth. Add 1 teaspoon of minced ginger and 1 teaspoon of minced garlic.
  2. Heat a tablespoon of vegetable oil in a skillet over medium-high heat. Season 1 pound of diced chicken with salt and pepper. Add chicken to the skillet and cook for 5-7 minutes until golden brown and cooked through.
  3. Pour the marinade over the cooked chicken in the skillet. Stir to coat the chicken evenly. Reduce heat to low and simmer for 2-3 minutes.
  4. Mix 1 tablespoon of cornstarch with 2 tablespoons of water until smooth. Slowly pour into the skillet, stirring continuously for 2-3 minutes until the sauce thickens.
