Method
 

Step-by-Step Instructions
  1. Sauté the diced onion in a large skillet over medium-high heat for about 3-4 minutes until translucent and fragrant.
  2. Add the ground beef, breaking it up as it cooks for 5-7 minutes until browned. Sprinkle taco seasoning and stir to combine.
  3. Reduce heat to low, layer cheddar and Monterey Jack cheese over the beef, cover, and cook for 1-2 minutes until melted.
  4. Toast hoagie rolls in a separate pan over medium heat for about 2-3 minutes until golden and crispy.
  5. Spread mayonnaise on the inside of each toasted roll, generously spoon cheesy beef mixture onto the bottom half.
  6. Top with diced tomato, chopped cilantro, and sliced jalapeño if desired.
  7. Place the top half of the hoagie roll on, slice in half, and serve hot.
