  • 1 teaspoon salt essential for balancing sweetness
  • 1 tablespoon sugar reduce for a less sweet dough
  • 2 tablespoons olive oil use melted unsalted butter if preferred
  • 2 teaspoons instant yeast active dry yeast can be used but needs proofing
  • 1 cup warm water ensure it’s not too hot
For the Filling
  • 1 cup shredded mozzarella cheese cheddar is a great alternative
  • 4 ounces chicken ham substitute with cooked chicken breast if desired
  • 4 slices turkey bacon regular or vegetarian bacon can also be used
  • 1 cup bell peppers swap with spinach or zucchini
  • 1/2 cup sliced mushrooms can be omitted or replaced
  • 1 teaspoon garlic powder fresh garlic can be used instead
  • 1 teaspoon dried oregano basil or Italian seasoning can substitute
  • 1 large egg for egg wash, omit for vegan options

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the dry ingredients: flour, salt, sugar, and instant yeast.
  2. Create a well in the dry ingredients and pour in warm water and olive oil, stirring to combine.
  3. Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic.
  4. Shape the dough into a ball, place in a lightly oiled bowl, cover, and let rise for 1–1.5 hours until doubled in size.
  5. Cook and chop turkey bacon and chicken ham, then combine with diced bell peppers, sliced mushrooms, cheese, garlic powder, and oregano.
  6. Punch down the risen dough, divide into 6 pieces, and roll each into a 6-inch circle on a floured surface.
  7. Lay each dough circle flat, add filling on one half, fold over, and seal the edges securely.
  8. Beat an egg and brush over each calzone for a golden finish, optionally sprinkle with salt.
  9. Preheat air fryer to 375°F (190°C) for 3–5 minutes before placing calzones inside.
  10. Cook calzones in the air fryer for 12–15 minutes until golden brown, flipping halfway if needed.
  11. Let calzones cool on a wire rack and serve warm with marinara sauce or a dip.
