  • 1 teaspoon Paprika

  • 2 cups Broth fish, chicken, or vegetable stock
  • 1 cup Fresh Tomatoes or Canned Crushed Tomatoes fresh preferred, canned is convenient
  • 1 can Coconut Milk light coconut milk is a lower-calorie option
  • 1/4 cup Chopped Fresh Cilantro or parsley as substitute
  • 2 scallions Scallion optional garnish
  • 2 wedges Lime Wedges for serving

Preparation Steps
  1. Marinate the fish with lime juice and salt for 20 minutes.
  2. Heat coconut oil and sauté diced onion until translucent.
  3. Add red bell pepper, carrots, and jalapeño, cooking for another 3 minutes.
  4. Incorporate garlic, tomato paste, paprika, and cumin, cooking until fragrant.
  5. Pour in broth, canned tomatoes, and coconut milk, then simmer for 8 minutes.
  6. Gently add the marinated fish and simmer for an additional 4-5 minutes.
  7. Stir in cilantro and lime juice before serving over rice or with bread.
