Step-by-Step Instructions for Cashew Chicken
  1. In a small bowl, whisk together chicken stock, soy sauce, honey, hoisin sauce, cornstarch, and rice wine vinegar until smooth.
  2. Toss your chicken pieces in a bowl with cornstarch until evenly coated.
  3. Heat oil in a skillet to 350°F. Fry chicken pieces for 2–3 minutes on each side until golden brown.
  4. In the same pan, add oil and sauté garlic, ginger, and cashews for about 1 minute.
  5. Pour the prepared sauce into the pan and cook for 2–3 minutes until bubbly and thickened.
  6. Add the crispy chicken back into the pan, tossing gently until coated, then sprinkle with green onions.
