  • 1 can Black Beans drained; pinto beans can be used instead
  • 1 cup Corn frozen peas are a substitute
  • 1 can Diced Tomatoes with Green Chilies or plain diced tomatoes for milder flavor
For the Creamy Layer
  • 1 can Condensed Cream of Mushroom Soup or cream of chicken for a different twist
  • 1 cup Sour Cream or Greek yogurt for a healthier alternative
For the Toppings
  • 2 cups Shredded Cheese use pepper jack for a spicy flavor
  • 1 bag Doritos crushed; other chip varieties can also be used

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large skillet, brown the ground beef for 5-7 minutes, adding the onion and garlic until translucent.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 3-5 minutes.
  4. In a separate bowl, mix the cream of mushroom soup and sour cream until smooth.
  5. Layer half of the meat mixture in the baking dish, top with half of the creamy mixture, cheese, and half of the Doritos.
  6. Repeat the layering with the remaining meat and creamy mixture, topping with the rest of the cheese and Doritos.
  7. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10 minutes.
  8. Allow to rest for 5-10 minutes before serving. Garnish as desired.

Notes
