- Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil.
- Cut the chicken breasts into thin cutlets for even cooking; pound them to an even thickness.
- In a bowl, combine olive oil, minced garlic, Italian seasoning, salt, and black pepper. Marinate the chicken cutlets for 15-30 minutes.
- Heat a tablespoon of olive oil in a skillet, add fresh spinach, and sauté for 2-3 minutes until wilted. Set aside.
- Beat the cream cheese until smooth, then add the sautéed spinach and half of the shredded mozzarella, mixing thoroughly.
- Arrange the marinated chicken cutlets in the baking dish and spread the creamy spinach mixture on top. Sprinkle remaining mozzarella cheese over it.
- Bake for 20-30 minutes until the cheese is bubbly and golden brown, and the chicken reaches 165°F (75°C).
- Remove from oven and let rest for 5 minutes before serving.
