Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil.
  2. Cut the chicken breasts into thin cutlets for even cooking; pound them to an even thickness.
  3. In a bowl, combine olive oil, minced garlic, Italian seasoning, salt, and black pepper. Marinate the chicken cutlets for 15-30 minutes.
  4. Heat a tablespoon of olive oil in a skillet, add fresh spinach, and sauté for 2-3 minutes until wilted. Set aside.
  5. Beat the cream cheese until smooth, then add the sautéed spinach and half of the shredded mozzarella, mixing thoroughly.
  6. Arrange the marinated chicken cutlets in the baking dish and spread the creamy spinach mixture on top. Sprinkle remaining mozzarella cheese over it.
  7. Bake for 20-30 minutes until the cheese is bubbly and golden brown, and the chicken reaches 165°F (75°C).
  8. Remove from oven and let rest for 5 minutes before serving.
