Ingredients
  

For the Meatballs
  • 1 lb Ground Beef substitute with ground lamb or turkey if desired
  • 3 cloves Garlic minced
  • 1 medium Onion finely chopped
  • 1 cup Breadcrumbs gluten-free if needed
  • 1 tsp Baking Soda
  • 1 bunch Fresh Herbs (parsley, mint, coriander) chopped
  • 2 tbsp Olive Oil
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
For the Roasted Potatoes
  • 2 lbs Potatoes cut into wedges
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt avoid fat-free
  • 1 medium Cucumber grated and excess water squeezed out
  • 2 tbsp Lemon Juice
  • 1 tbsp Fresh Dill or Mint chopped
For the Salad
  • 2 cups Crisp Lettuce Leaves as the base
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • 1 small Red Onion sliced
  • 1 cup Kalamata Olives pitted
  • 2 tbsp Extra Olive Oil for dressing
  • 2 tbsp Lemon Juice for dressing

Method
 

Meatball Preparation
  1. In a large bowl, combine ground beef, minced garlic, and finely chopped onions. Add breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix well until fully combined, then cover the bowl with plastic wrap. Refrigerate the mixture for at least 2 hours to allow the flavors to meld.
Baking Meatballs
  1. Preheat your oven to 425°F (220°C). After chilling, roll the mixture into 1-inch meatballs and arrange them on a lined baking sheet. Bake for 30-40 minutes until golden brown and cooked through.
Roasting Potatoes
  1. While meatballs bake, prepare the potatoes. Toss wedges with olive oil, salt, cumin, paprika, and oregano in a bowl. Spread on a baking sheet and roast for 40-60 minutes, flipping halfway through.
Making Tzatziki Sauce
  1. In a mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, and chopped dill or mint. Stir thoroughly, season with salt, and chill in the refrigerator.
Assembling the Bowl
  1. Start with a layer of lettuce leaves, then add diced tomatoes, cucumber slices, red onion, and olives. Layer in the roasted potatoes and meatballs. Top with tzatziki sauce and serve.
