  • 1 lb Ground Beef Aim for 80/20 for juiciness
  • 1 Onion Yellow onion preferred
  • 1.5 tbsp Minced Garlic Consider using roasted garlic
  • 1 tbsp Chili Powder Adjust for desired spiciness
  • 1 tsp Cumin A staple in taco seasoning
  • 1 tbsp Dried Cilantro
  • 1 tbsp Dried Oregano
For the Crunch
  • 2 tbsp Olive Oil Can substitute with canola oil
  • 1 tbsp Butter Unsalted preferable
  • 8 pieces Corn Tortillas Can substitute with flour tortillas
For the Toppings
  • 1 cup Monterey Jack Cheese Cheddar or queso fresco as alternatives
  • 4 Tomatoes For pico de gallo
  • 1/2 Onion Red onion recommended
  • 1 Jalapeño Remove seeds for less heat
  • 1/2 bunch Cilantro
  • 2 Limes For a zesty finishing touch
  • Salt To taste
  • Pepper To taste

Method
 

Step-by-Step Instructions
  1. Peel and cube potatoes, toss with olive oil, salt, pepper, garlic powder, and paprika. Air fry at 400°F for 20 minutes, shaking every 5 minutes.
  2. Heat skillet, add ground beef, and sauté until browned, about 5-7 minutes. Drain excess fat.
  3. Add diced onion to beef and cook for 2-3 minutes until softened. Stir in garlic, chili powder, cumin, cilantro, and oregano. Simmer for 1-2 minutes.
  4. Fold cooked potatoes into the beef mixture in the skillet, warming everything through on low heat.
  5. Combine diced tomatoes, onion, jalapeño, and cilantro in a bowl. Squeeze lime juice over, season with salt and pepper, and let sit.
  6. Melt butter in a skillet, warm tortillas for 30 seconds each side. Add cheese and beef-potato filling before folding.
  7. Top tacos with pico de gallo and serve warm.
