  • 1 lb Beef Brisket or chuck roast or short ribs
  • 6 cups Water
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 2 tbsp Gochujang (Korean red pepper paste) or mix with miso and chili powder
  • 2 tbsp Gochugaru (Korean red pepper powder) or crushed red pepper flakes
  • 4 cloves Garlic (minced)
  • 1 medium Onion (chopped)
For the Veggies
  • 1/2 head Napa Cabbage or bok choy or green cabbage
  • 14 oz Firm Tofu (pressed and cubed) or eggplant for vegan
  • 1 medium Daikon Radish (sliced) or white radish or turnips
For the Finishing Touches
  • 1 tbsp Sesame Oil
  • 2 scallions Green Onions (sliced) optional but recommended
  • to taste Salt
  • to taste Pepper
For Serving
  • 2 cups Cooked White Rice or cooked udon noodles

Method
 

Step-by-Step Instructions
  1. Prepare the Beef Broth: In a large pot, combine the beef brisket with enough water to fully cover it, about 6 cups. Bring to a vigorous boil over high heat, then reduce heat to simmer for 30 minutes, skimming impurities.
  2. Flavor the Broth: Stir in the soy sauce, gochujang, gochugaru, and minced garlic. Simmer for another 5 minutes to allow flavors to develop.
  3. Add the Vegetables: Introduce the chopped onion, napa cabbage, cubed tofu, and sliced daikon. Stir well and simmer for another 20 minutes.
  4. Sauté the Green Onions: Heat sesame oil in a small pan. Add sliced green onions and sauté for 2-3 minutes until fragrant.
  5. Final Seasoning and Serve: Taste the soup and adjust with salt and pepper. Serve hot with cooked white rice.
