Method
 

Step-by-Step Instructions
  1. Generously season the chuck roast with salt and pepper on all sides, ensuring a flavorful base.
  2. In a skillet over medium-high heat, add olive oil and heat until shimmering. Sear each side of the roast for 2-3 minutes until browned.
  3. Chop the onions, carrots, and quarter the potatoes into large pieces. Arrange these vegetables in the bottom of the slow cooker.
  4. Minced the garlic and sprinkle it over the vegetables along with thyme and a bay leaf.
  5. Lay the seared roast on top of the bed of vegetables in the slow cooker.
  6. Whisk together beef broth and Worcestershire sauce, then pour this mixture around the roast.
  7. Cover and set the slow cooker to LOW for 8 hours or HIGH for 4-5 hours.
  8. Remove the bay leaf and let the roast rest for about 10 minutes before slicing.
