- Generously season the chuck roast with salt and pepper on all sides, ensuring a flavorful base.
- In a skillet over medium-high heat, add olive oil and heat until shimmering. Sear each side of the roast for 2-3 minutes until browned.
- Chop the onions, carrots, and quarter the potatoes into large pieces. Arrange these vegetables in the bottom of the slow cooker.
- Minced the garlic and sprinkle it over the vegetables along with thyme and a bay leaf.
- Lay the seared roast on top of the bed of vegetables in the slow cooker.
- Whisk together beef broth and Worcestershire sauce, then pour this mixture around the roast.
