Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with avocado oil.
  2. Chop the sweet potatoes into 1-inch cubes and heat avocado oil in a skillet. Sauté sweet potatoes, onion, green pepper, and garlic for about 9 minutes until slightly softened.
  3. Spread the sautéed vegetables evenly in the greased casserole dish.
  4. In the same skillet, cook the turkey sausage, breaking it into pieces until fully cooked (about 5-7 minutes) and drain excess grease. Add on top of the vegetables.
  5. In a mixing bowl, whisk together eggs, milk, thyme, salt, and pepper until smooth.
  6. Pour the egg mixture over the vegetables and sausage in the casserole dish. Gently stir to combine.
  7. Bake for 40-45 minutes until the center is firm. If browned, cover with foil.
  8. Allow to cool for 15 minutes before slicing and serving.
