- Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with avocado oil.
- Chop the sweet potatoes into 1-inch cubes and heat avocado oil in a skillet. Sauté sweet potatoes, onion, green pepper, and garlic for about 9 minutes until slightly softened.
- Spread the sautéed vegetables evenly in the greased casserole dish.
- In the same skillet, cook the turkey sausage, breaking it into pieces until fully cooked (about 5-7 minutes) and drain excess grease. Add on top of the vegetables.
- In a mixing bowl, whisk together eggs, milk, thyme, salt, and pepper until smooth.
- Pour the egg mixture over the vegetables and sausage in the casserole dish. Gently stir to combine.
- Bake for 40-45 minutes until the center is firm. If browned, cover with foil.
- Allow to cool for 15 minutes before slicing and serving.
