Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a baking pan with olive oil.
  2. Pat the red snapper fillets dry, then season with salt, pepper, Creole seasoning, and smoked paprika.
  3. Sear the fish in a sauté pan with olive oil over medium-high heat for about 3 minutes per side.
  4. Transfer the fish to the baking pan and bake for approximately 15 minutes until the internal temperature is 130°F (54°C).
  5. In the same sauté pan, add butter and sauté onions, bell peppers, and tomatoes for about 5 minutes.
  6. Stir in tomato paste and heavy cream, thinning with chicken broth, and let simmer for 5 minutes on low heat.
  7. Serve the baked fish topped with the creamy sauce and garnish with parsley.
