  • 2 cloves Garlic Minced
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 tablespoon Sweetener Maple syrup or agave
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Red Chili Flakes Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly.
  2. Cut the Yukon potatoes into quarters and spread them evenly on the baking sheet. Roast for 35-40 minutes, flipping halfway through.
  3. Chop the green onions and cucumber into small pieces. In a bowl, combine with pistachios, dill, and parsley.
  4. In another bowl, whisk together mayonnaise, mustard, garlic, lemon juice, sweetener, salt, and pepper until smooth.
  5. Once potatoes cool slightly, mix them with the veggie mixture and toss with dressing.
  6. Serve immediately warm or chill in the fridge for 30 minutes before serving.
