Step-by-Step Instructions
  1. Marinate the beef in a bowl with soy sauce, cornstarch, and vegetable oil for 10 minutes.
  2. Heat the wok over high heat until shimmering, then add vegetable oil.
  3. Add marinated beef in batches, searing for 1-2 minutes until brown, then set aside.
  4. Reduce heat to medium, sauté the minced ginger for 1 minute, then add garlic, Shaun Cha sauce, and sugar for 2 minutes.
  5. Return the beef and scallions to the wok, stir-fry for 1 more minute until scallions are wilted.
