Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with aluminum foil, lightly greasing it with cooking spray.
  2. Melt ½ cup of unsalted butter in a microwave-safe bowl and mix in 1 cup of flour, ¾ cup of oats, ½ cup of granulated sugar, ¼ cup of light brown sugar, and ½ teaspoon of salt until crumbly.
  3. Reserve 1 heaping cup of crumble for topping, then press the remaining mixture into the bottom of the prepared pan.
  4. In another bowl, combine 2 cups of coarsely chopped strawberries, 2 tablespoons of lemon juice, ½ cup of sugar, and 2 teaspoons of cornstarch, mixing gently.
  5. Pour the strawberry mixture over the pressed crust and spread it evenly. Sprinkle the reserved crumble topping over the strawberries.
  6. Bake for approximately 50 minutes until edges are golden-brown and center is set.
  7. Allow to cool in the pan for at least one hour before slicing into squares.
