- Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with aluminum foil, lightly greasing it with cooking spray.
- Melt ½ cup of unsalted butter in a microwave-safe bowl and mix in 1 cup of flour, ¾ cup of oats, ½ cup of granulated sugar, ¼ cup of light brown sugar, and ½ teaspoon of salt until crumbly.
- Reserve 1 heaping cup of crumble for topping, then press the remaining mixture into the bottom of the prepared pan.
- In another bowl, combine 2 cups of coarsely chopped strawberries, 2 tablespoons of lemon juice, ½ cup of sugar, and 2 teaspoons of cornstarch, mixing gently.
- Pour the strawberry mixture over the pressed crust and spread it evenly. Sprinkle the reserved crumble topping over the strawberries.
- Bake for approximately 50 minutes until edges are golden-brown and center is set.
- Allow to cool in the pan for at least one hour before slicing into squares.
